all our wood is raw and only coated with "wood butter" which is just bee wax and food grade oils. the coating can last for several months but I'd recommend applying it once a month or more if your using it frequently. DO NOT wash in dishwasher or leave wet for long periods. the wood will naturally change colors over time usually darkening some. it is a natural process of wood. the more direct sunlight it receives the faster it will change. I would recommend getting a oil that has bees wax in it as the wax works well to repel the water and helps when cleaning. ATTENTION PLEASE!!these knives are for soft served foods. Certain breads cakes,pies cornbread etc. they work great for those and keeps from scratching up a beautiful cake plate.
